Air-Fryer Zucchini Fritters

We love a simple air fryer recipe! These delicious zucchini fritters have a crispy outer surface and a tender-savory middle, just as if they’ve been fried in a pan. A simple dollop of sour cream and a sprinkle of refreshing mint is all you need to complete the dish.

Ingredients

Cooking spray

2 medium zucchini

1 large egg, lightly beaten

½ cup grated Parmesan cheese

⅓ cup whole-wheat flour

1 teaspoon garlic powder

1 teaspoon onion powder

¼ teaspoon ground pepper

½ cup sour cream

2 tablespoons chopped fresh mint

Method

Step 1. Preheat air fryer to 190°F for 10 minutes. Generously coat the fryer basket with cooking spray.

Step 2. Grate zucchini on the large holes of a box grater over a clean kitchen towel. Gather the grated zucchini in the towel and squeeze over the sink to remove as much liquid as possible. Transfer the zucchini to a medium bowl. Add egg, Parmesan, flour, garlic powder, onion powder and pepper; stir until combined. Shape the mixture into 8 patties (about 8cm wide).

Step 3. Working in batches if necessary, coat the tops of the patties with cooking spray. Arrange them in a single layer in the fryer basket. Cook for 7 minutes; flip the patties and continue to cook until crisp and well-browned, about 7 minutes more. Serve with sour cream and mint.
